Then it's the yummy egg plants that we are eating!!! Peel, slice up, dip in eggs and bread crumbs and fry them in olive oil. So tasty!!! And don't forget to eat them with a dab of homemade ketchup! Pizza Sauce ...
8 Qt. tomato juice
5 onions
4 green peppers
1/2 tsp. red pepper
1 c. olive oil
1 1/2 c. brown sugar
1/2 c. salt
1 Tb. basil
1 Tb. oregano
1 Tb. minced garlic
1 Tb. Italian seasoning
5, 12 oz. cans tomato paste
Boil all the ingredients for 10 minutes. Put in jars and cold pack for 10 minutes to seal!
Yield: 22 pints
Salsa Recipe I used this year ...
14 c. chopped tomatoes
3 c. chopped sweet onions
1/2 c. chopped hot peppers
1 c. chopped green peppers
1/2 c. vinegar
1/2 c. tomato sauce
3 Tb. salt
1 Tb. chili powder
1 Tb. garlic powder
1 1/2 tsp. cumin
5 Tb. clear gel
5 garlic buds, minced
1 Tb. brown sugar
Mix all ingredients and bring to a boil. Put in jars and cook in hot water bath for 10 minutes to seal.
Yield: 9 pints
The salsa will be delicious as a dip and the pizza sauce we will enjoy on pizza or as a dipping sauce!
