A way in a manger ~

We had a fun weekend gathering with friends and family again.
 
Friday night, we ordered some pizza to be delivered to the house.  That was a nice treat!  Matt and Lena came and we took them on guys vs. girls with Rook Board.  Let's just say it not real important who won the most!!!  :)  We also enjoyed the sand tarts that are in the house!
 
Saturday, we did some house chores in the morning, and then off to a birthday party for Boden.  Happy Birthday, big boy!!!  We ate pizza and enjoyed the games at Chuckie Cheeses.  The kids loved it!  Then we spent the evening with Ben's playing 1 1/2 games of settlers.  (Our last game was a bit losy and it was getting late, so we quit.)
 
Sunday, we were off to Sunday School.  We are youth teachers, but because all the youth went to Philadelphia for the day to spread the Christmas Spirit to the city, we sat in an adult class.  Fun!  Interesting!  Hadassah and Matthew went home with ShaLyn and Madison and then caroling and gift giving with their grandma, Lynn.  She wanted to deliver some food gifts to widows and friends and asked the kids to to go along and sing a few songs.  They had a blast! 
 
Mike and I got to have an extra quit lunch and a very relaxing afternoon.  We got invited to Dave's in the evening.  I said I would bring a 'sweet tray'.  I've been thinking a lot about Soft Ginger Cookies and really waiting for a good reason to bake some.  Here was my chance.  The kitchen soon filled with a wonderful smell of ginger and cinnamon and warm, melted white chocolate. 
 
 
Soft Ginger Cookies:
1/2 Cup Oil
2 Cup Brown Sugar
1/2 Cup Brer Rabbit Molasses
2 Eggs
3-4 Cups Flour
4 tsp. Baking Soda
1 tsp. Ground Ginger
2 tsp. Cinnamon
1/2 tsp. Salt
 
Mix first four ingredients then add the rest.  Make 1" balls and dip into sugar.  Bake 10 - 12 minutes at 325 degrees.  Let set a few minutes before taking off cookie sheet.  Dip half in melted white chocolate if desired!  Yield: 4 dozen
 
The kids returned home with excitement.  ShaLyn and Madison stayed here till it was time to leave for Dave's.  I took my tray of freshly baked cookies but the funny thing is, when we got to Dave's, Marlene had the exact same kind of cookies on the platter she brought along.  She added some chocolate covered crackers and my tray I added sand tarts.  I guess this kind of cookie is a holiday favorite for others!  They were both yummy!  Thanks Dave and Suz for the fun night and delicious soup and soft pretzels!
 
We have a pretty calm week this week!  I am thinking this is my chance to get my cards in the mail, before the holiday rush.  Looking at next week ... well, let's just say it will be action packed with baking, goodies, programs, and Christmas fun!!!
